Here is a menu idea for a vegetarian Asian cookery course that is both varied and delicious:
1. Starter: Spring rolls with vegetable filling*
Crispy spring rolls filled with a mixture of carrots, cabbage, glass noodles and shiitake mushrooms, served with a sweet and sour sauce.
2. Main course: Thai curry with tofu*
Flavorsome red Thai curry with tofu, coconut milk, peppers, courgettis and fresh basil, served with fragrant jasmine rice.
3. side dish: fried rice with pineapple and cashew nuts**
Fried rice mixed with fresh pineapple, roasted cashew nuts, peas and spring onions, flavored with soy sauce and sesame oil.
4. Dessert: Sticky rice with mango*
Sweet, sticky rice, garnished with fresh mango slices and a touch of coconut cream.
5. Drink: Ginger and lemongrass tea*
A refreshing, homemade tea made with fresh ginger and lemongrass, perfect to finish the meal.
