Here’s an exciting vegetarian cheese menu for your cookery course, where we make our own mozzarella, ricotta, mascarpone, cream and cottage cheese:

1st *Starter: Caprese salad with fresh mozzarella*
– Start the meal with a classic caprese salad. Use homemade mozzarella, fresh tomatoes, basil, olive oil and a touch of balsamic vinegar. This combination perfectly emphasises the freshness and creaminess of the mozzarella.

2nd *First course: Ricotta and spinach ravioli*
– Handmade ravioli filled with a mixture of fresh ricotta and sautéed spinach, served in a light butter and sage sauce. These ravioli are a perfect way to enjoy the delicate texture and mild flavour of ricotta.

3rd *Main course: Mascarpone and mushroom risotto*
– A creamy risotto enriched with homemade mascarpone and flavoured with sautéed mushrooms and fresh herbs. The mascarpone gives the risotto an unrivalled creaminess and depth.

4. side dish: creamy cucumber salad**
– A fresh cucumber salad with a dressing of homemade cream, dill and a squeeze of lemon juice. This salad is the perfect complement to the rich flavours of the main course.

5th *Dessert: Cottage cheese and pineapple dessert*
– To finish, a light and fruity dessert combining fresh cottage cheese with juicy pineapple pieces and a drizzle of honey. This refreshing dessert rounds off the menu perfectly and provides a sweet finish.
